The natural heather honey is made by the bees from the nectar collected from the small purple flower. It blooms at the beginning of September, but before beekeepers have to place the beehives to that place since to be a specific bloom they can not have the hives in that place all the year since the bees would die of hunger. Heather is a shrub that grows massively mainly in the northern part of Spain. It is one of the most expensive honeys to produce.
It is of a dark brownish color and has an important aroma with a somewhat strong taste, powerful, enveloping and little sweet, in fact it is the least sweet that exists but of pleasant taste and sometimes it will be bought with the caramel. Its liquid state is exceptional, has a very unusual texture: it is thixotropic, which means that it is like gelatin until it is removed and becomes liquid or rather syrup texture. Its crystallization is slow, forming small bubbles that make it shine when the light reflects. Its strong rich and smoky flavor has been compared to the caramel. Also by its characteristics has always been compared with the manuka honey.
