Rosemary is an autochthonous plant of the Iberian peninsula, but only grows in certain areas, which are the Mediterranean inland zone, sierra de granada and mainly Toledo hills. A production almost always scarce because it is very demanded and sold quickly. The harvest time is usually about April, when the flower reaches maturity, that is when the bees liban to collect the nectar, as long as the rains have favored the growth of these, (there are years where the rains have not reached an adequate volume and the growth of rosemary has been completely null, in these cases the harvest of rosemary honey is practically zero and prices soar).

The softness and the flavor of these honeys can not be compared to any other. A taste that always likes not to be cloying, not too sweet, just like even if you are more sugar than honey.

The aroma of honey in general, is difficult to evaluate, since the notes are not usually so pronounced and even less if we are not expert scavengers. What the experts say is that natural rosemary honey has a fresh, floral scent, but far from the characteristic smell of its leaves and flowers.

Crystallization depends very much on temperature and variety. In these natural honeys an average crystallization is usually given, with a very thick consistency at all times. Although we have said that it depends a lot on temperature, in winter it tends to crystallize faster than in the hot summer months. Crystallization is a natural process, and in fact is a sign that it is a raw product, which has not been heated to high temperatures, as high heating causes the crystals to break, making it liquid but also removing all properties nutritional benefits they possess. If the rosemary honey you have bought is in a crystallized state and you want to make it liquid, you have to heat it to the water bath at a low temperature, so that it slowly forms liquid and does not lose any of its properties.

The color of the honey of natural rosemary is a curiosity in all rule. The recently harvested tone is usually a clear amber, (often depending on some other nectar that has collected the bee, is a little darker), but at the time of crystallization can become white. Something very curious, since it is the only honey that produces this color. Cristalizada

Me ha llegado la miel cristalizada, algo que en mi lugar no me gusta, la prefiero líquida porque la utilizo para mezclarla con yogurt pero bueno, la pondré al baño María. Aunque de sabor excelente

    La única miel que me gusta es la de romero porque tiene un sabor muy agradable. Pero no sabia que el sabor de la miel de romero era este. De verdad de corazón que se nota que esta miel es autentica, aunque sea más caras que otras merece la pena. Probarla y ya me direis. Saludos y gracias a mieleshoney por incluir este proveedor
